Ingredients
  

Main
  • 8 to 10 fresh mint leaves
  • 1/2 fresh lime cut into 2 wedges
  • 1/2 ounce coconut cream
  • 1.5 ounces coconut rum such as Malibu or similar
  • 1/2 ounce fresh lime juice
  • 3/4 ounce simple syrup
  • 4 ounces club soda or sparkling water
  • Ice cubes
  • Fresh mint sprig for garnish optional
  • Lime wheel for garnish optional

  • Jigger or shot glass for measuring
  • Bar spoon or long spoon for stirring

Method
 

  1. Fill your tall glass with ice cubes while you prepare the drink. A cold glass keeps the mojito refreshing longer and prevents the ice from melting too quickly.
  2. Take your 8 to 10 fresh mint leaves and gently rinse them under cool water. Pat them dry with a paper towel to remove excess moisture.
  3. Place the mint leaves and two lime wedges into your cocktail shaker or mason jar. Using your muddler or the back of a wooden spoon, gently press the mint and lime together for about 10 seconds, just until the mint becomes fragrant and the lime releases its juice. Don't crush too hard, or the mint will bruise and turn bitter.
  4. Pour 1.5 ounces of coconut rum and 3/4 ounce of simple syrup into the shaker with the mint and lime.
  5. Pour 1/2 ounce of coconut cream into the shaker.
  6. Add a handful of ice cubes to your shaker, then pour in 1/2 ounce of fresh lime juice.
  7. Secure the lid on your shaker and shake vigorously for about 10 to 12 seconds to chill the mixture thoroughly and help the coconut cream blend smoothly with the other ingredients.
  8. Remove the ice from your chilled glass and strain the cocktail into it using your strainer. Discard the muddled mint and lime pieces from the shaker.
  9. Pour 4 ounces of club soda into the glass and stir gently with a bar spoon.
  10. Add a fresh mint sprig and a lime wheel to the rim of the glass if desired. Serve immediately and enjoy while cold.

Notes

Use fresh mint and lime juice for best flavor. Muddle gently to avoid bitter mint. Chill your glass before serving to prevent dilution. Use full-fat coconut cream for richness. The drink is best served immediately while carbonation is strong. For a low-carb version, replace simple syrup with sugar-free alternatives. For a non-alcoholic version, omit coconut rum, increase coconut cream to 1 ounce, and add extra club soda.
