Classic Tequila Sour

Ingredients
  

Main
  • 2 ounces premium tequila 100% agave blanco or reposado
  • 1 ounce fresh lime juice about one lime
  • 0.75 ounces simple syrup or agave nectar
  • One egg white optional, for silky texture
  • Ice cubes for shaking
  • Lime wheel or wedge for garnish

Equipment

  • Cocktail shaker
  • Jigger or measuring shot glass
  • Barspoon
  • Hawthorne or julep strainer
  • Citrus juicer or press
  • Cocktail glass (rocks glass or coupe)
  • Cutting board and knife

Method
 

  1. Cut one fresh lime in half and juice it directly into your jigger to measure exactly one ounce of fresh lime juice.
  2. Pour two ounces of premium tequila into the jigger and add to your shaker.
  3. Measure 0.75 ounces of simple syrup and add to the shaker.
  4. Fill the cocktail shaker halfway with fresh ice cubes.
  5. Add the egg white to the shaker for a dry shake (optional).
  6. Seal the shaker and dry shake vigorously for about eight seconds without ice.
  7. Add the tequila, lime juice, and simple syrup to the shaker.
  8. Seal the shaker, add ice, and wet shake hard for about ten seconds until the outside of the shaker frosts over.
  9. Strain the mixture into a rocks glass filled with fresh ice using a hawthorne strainer.
  10. Express a lime wheel’s oils over the top by twisting it and garnish the cocktail with the lime wheel or wedge.

Notes

Best enjoyed immediately with fresh ingredients; simple syrup and lime juice can be prepared in advance.
