- Cut the watermelon into roughly 1 inch cubes, removing any seeds you encounter. Smaller pieces blend more easily and create a smoother final texture.
- Place the cubed watermelon into your blender. Starting with the fruit on the bottom helps the blades catch and process everything evenly.
- Pour in 2 cups of the cold water along with the sugar, lime juice, and salt. Adding only half the water now creates a concentrated base that blends more efficiently.
- Blend on high speed for 60 to 90 seconds until completely smooth. You want no visible fruit chunks remaining, just a uniform, vibrant liquid.
- Pour the blended mixture through a fine mesh strainer into your pitcher. Use a spoon to press the pulp and extract every drop of flavorful liquid. This step removes fiber and creates that signature silky texture.
- Stir in the remaining 2 cups of cold water to reach the perfect concentration. Agua fresca should be refreshing and light, not thick like a smoothie.
- Take a sip and adjust the sweetness or lime to your preference. Add more sweetener by the teaspoon until it hits your sweet spot.
- Refrigerate for at least 30 minutes to let the flavors meld together. Serve over ice with fresh mint leaves as a garnish for that picture perfect presentation.
Notes
Freeze some of your agua fresca in ice cube trays and use these fruit cubes instead of regular ice to keep your drink from getting watered down. Store in an airtight pitcher for 3 to 4 days in the refrigerator. Stir well before serving as separation is normal. For variations, try cucumber lime, mango chile, or mixed berry.
