Ingredients

Main
  • 8 ounces of semi-sweet chocolate chopped
  • 1/2 cup of heavy cream
  • 1 teaspoon of vanilla extract
  • 1/4 cup of cocoa powder for dusting
  • Optional: toppings like crushed nuts or coconut

Equipment

  • Medium saucepan
  • Mixing bowl
  • Whisk or spatula
  • Melon baller or small scoop
  • Double boiler or microwave-safe bowl
  • Sheet pan or plate
  • Parchment paper

Method

  1. In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  2. Remove the saucepan from heat and stir in the chopped chocolate. Let it sit for a minute to soften, then whisk until completely smooth.
  3. Add the vanilla extract to the chocolate mixture and stir well.
  4. Transfer the mixture to a mixing bowl and cover it with plastic wrap. Chill in the refrigerator for about 2 hours or until firm enough to scoop.
  5. Once chilled, use a melon baller or small scoop to portion out the chocolate mixture.
  6. Roll each portion between your hands to form a smooth ball.
  7. Roll the truffles in cocoa powder or your desired toppings.
  8. Place the coated truffles on a parchment-lined sheet pan and refrigerate for another 30 minutes.
