Ingredients
  

For the Base
  • 1.5 cups 200 grams pitted dates
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla extract
For the Chocolate Layer
  • 8 ounces 225 grams dark chocolate (70% cacao), chopped
  • 1 tablespoon coconut oil
For Toppings
  • 1/2 cup almonds or walnuts roughly chopped
  • Sea salt flakes for finishing
  • 1 tablespoon dried rose petals optional
  • 2 tablespoons sesame seeds optional

  • Food processor or sharp knife

Method
 

  1. Line a baking sheet or loaf pan with parchment paper.
  2. Add the pitted dates to a food processor and pulse until they form a chunky paste.
  3. Pulse in the unsalted butter, sea salt, and vanilla extract until a sticky, moldable mixture forms.
  4. Transfer the date mixture to the prepared pan and spread into an even 1/4-inch-thick layer with an offset spatula.
  5. Place the chopped dark chocolate and coconut oil in a microwave-safe bowl and heat in 30-second intervals, stirring until smooth and glossy.
  6. Pour the melted chocolate over the date layer and spread evenly with an offset spatula before it cools.
  7. Scatter the chopped nuts, sesame seeds, and dried rose petals over the chocolate, pressing gently to adhere.
  8. Sprinkle sea salt flakes on top and freeze the bark for at least 2 hours until fully set.
  9. Remove from the freezer, let sit for 2 to 3 minutes, then cut or break into 2-inch pieces with a sharp knife.

Store date bark in an airtight container in the freezer or refrigerator; it tastes best when cold and snaps cleanly.
