Ingredients

Main
  • 2 pounds chitlins cleaned and cut into small pieces
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper optional for heat
  • 4 cups chicken broth or water
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon hot sauce optional

Equipment

  • Large pot or Dutch oven
  • Colander
  • Wooden spoon
  • Sharp knife
  • Cutting board
  • Measuring cups and spoons

Method

  1. Start by thoroughly cleaning the chitlins under cold running water.
  2. Chop the onion and mince the garlic.
  3. In a large pot, heat a splash of oil over medium heat and add the onion and garlic. Sauté until the onion is translucent, about 5 minutes.
  4. Add the cleaned chitlins to the pot, stirring well to combine with the onions and garlic.
  5. Sprinkle in the salt, black pepper, and cayenne pepper. Stir to ensure even seasoning.
  6. Add the chicken broth or water, bringing the mixture to a gentle boil.
  7. Reduce the heat to low and cover the pot. Let it simmer for about 2 hours, stirring occasionally.
  8. In the last few minutes of cooking, stir in the apple cider vinegar and hot sauce if using.

Notes

Chitlins are best enjoyed hot and fresh from the pot. Pair them with cornbread or collard greens.
