Ingredients
  

Main
  • 1 cup Greek yogurt or sour cream
  • 3/4 cup mayonnaise
  • 3 chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce from the can
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 to 4 tablespoons water or milk for thinning if needed

Equipment

  • Blender or food processor
  • Measuring cups and spoons
  • Cutting board and knife
  • Glass jar with lid for storage
  • Rubber spatula for scraping

Method
 

  1. Gather and measure all ingredients.
  2. Place Greek yogurt and mayonnaise in the blender.
  3. Add chipotle peppers and adobo sauce to the blender.
  4. Add fresh lime juice and honey.
  5. Add minced garlic, cumin, and smoked paprika.
  6. Season with salt and black pepper to taste.
  7. Blend on high speed for 60 to 90 seconds until smooth.
  8. If the dressing is too thick, add water or milk one tablespoon at a time and blend until desired consistency is reached.
  9. Transfer dressing to a jar, seal, and refrigerate for at least 30 minutes before serving.

Notes

Shake or stir well before each use and store in the refrigerator for up to five days.
