Ingredients

Main
  • 2 cups all-purpose flour
  • 3/4 cup boiling water
  • 1/4 cup cold water
  • 1/4 tsp salt
  • 2 tbsp vegetable oil for cooking

Equipment

  • Mixing bowl
  • Rolling pin
  • Non-stick frying pan
  • Spatula
  • Clean kitchen towel

Method

  1. In a mixing bowl, combine the all-purpose flour and salt.
  2. Gradually pour in the boiling water while stirring to form a rough dough.
  3. Once the dough is cool enough to handle, knead it on a floured surface for about 5 minutes until smooth and elastic.
  4. Divide the dough into 8 equal pieces and roll them into balls.
  5. On a floured surface, roll out one dough ball thinly into a circle, aiming for about 8 inches in diameter.
  6. Brush a thin layer of vegetable oil over the surface of the rolled-out dough.
  7. Starting from one edge, roll the dough into a log and then coil the log into a round shape, tucking the end underneath.
  8. Gently flatten the coiled dough with your palm and then roll out again into a circle about 6 inches in diameter.
  9. Heat a non-stick frying pan over medium heat and add a drizzle of oil.
  10. Cook each pancake for about 2-3 minutes on each side until golden and crispy.

Notes

Serve warm with hoisin sauce or crispy duck fillings.
