Ingredients

Main
  • 1 pound of chicken breast cut into bite-sized pieces
  • 1 cup of coconut milk full-fat for richer flavor
  • 2 tablespoons of soy sauce for umami depth
  • 1 tablespoon of cornstarch to thicken the sauce
  • 2 cloves of garlic minced for aromatic goodness
  • 1 tablespoon of fresh ginger grated for warmth
  • 1 tablespoon of vegetable oil for cooking
  • 1 teaspoon of sugar to balance flavors
  • Salt and pepper to taste
  • Chopped green onions for garnish

Equipment

  • Large skillet or wok
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Wooden spoon or spatula

Method

  1. Start by cutting the chicken into bite-sized pieces. This ensures even cooking and makes it easier to enjoy.
  2. In a bowl, whisk together the coconut milk, soy sauce, cornstarch, sugar, garlic, and ginger.
  3. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Add the chicken pieces to the skillet and season with salt and pepper. Sauté until the chicken is browned on all sides, about 5-7 minutes.
  5. Pour the coconut sauce mixture over the chicken in the skillet. Stir well to coat all the pieces.
  6. Reduce the heat to low and let it simmer for about 10 minutes, stirring occasionally.
  7. Taste the sauce and adjust the seasoning if needed.
  8. Serve the chicken over rice and garnish with chopped green onions.

Notes

For extra flavor, marinate the chicken in soy sauce and ginger for 30 minutes before cooking.
