Ingredients

Main
  • 4 large flour tortillas
  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Vegetable oil for frying
  • Optional toppings: sour cream guacamole, and fresh cilantro

Equipment

  • Large skillet
  • Mixing bowl
  • Tongs
  • Deep fryer or heavy pot
  • Paper towels

Method

  1. In a large mixing bowl, combine the shredded chicken, cheese, black beans, salsa, cumin, and chili powder.
  2. Heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  3. Place a generous scoop of the filling in the center of each tortilla.
  4. Fold in the sides and roll tightly from the bottom up.
  5. In a deep fryer or heavy pot, heat about 2 inches of vegetable oil to 350°F (175°C).
  6. Carefully place the rolled chimichangas in the hot oil, seam-side down. Fry until golden brown, about 3-4 minutes per side.
  7. Using tongs, remove the chimichangas from the oil and place them on paper towels.
  8. Serve hot with your favorite toppings like sour cream, guacamole, or fresh cilantro.

Notes

Let the filling cool slightly before wrapping to prevent soggy tortillas.
