Ingredients

Main
  • 1 lb boneless chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons plain yogurt
  • 3 cloves garlic minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

Equipment

  • Mixing bowl
  • Whisk
  • Grill or oven
  • Knife and cutting board
  • Tongs
  • Serving platter

Method

  1. In a mixing bowl, combine olive oil, yogurt, garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper.
  2. Place the chicken thighs in the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes, or up to overnight.
  3. Preheat the grill to medium-high heat or the oven to 400°F.
  4. Place the marinated chicken on the grill, cooking for about 6-7 minutes per side, or bake in the oven for 20 minutes.
  5. Once cooked, let the chicken rest for 5 minutes.
  6. Slice the chicken into thin strips.
  7. Prepare your favorite toppings such as lettuce, tomatoes, cucumber, and tahini sauce.
  8. Serve the chicken on a plate or wrap it in pita bread with your toppings.

Notes

Allow the chicken to marinate longer for better flavor; overnight is ideal.
