Ingredients
  

Main
  • 1 pound rigatoni pasta
  • 1 pound boneless skinless chicken breasts, cubed
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 teaspoon crushed red pepper flakes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

  • Large pot for boiling pasta
  • Skillet or frying pan
  • Colander
  • Knife and cutting board
  • Wooden spoon or spatula

Method
 

  1. Bring a large pot of salted water to a boil over high heat and cook rigatoni until al dente according to package instructions.
  2. Heat olive oil in a skillet over medium heat, add cubed chicken, and cook until browned and cooked through, about 5 to 7 minutes.
  3. Add diced onion, minced garlic, and sliced bell peppers to the skillet and sauté until vegetables soften, about 3 to 4 minutes.
  4. Sprinkle crushed red pepper flakes into the mixture and cook for 1 minute to release the spice.
  5. Pour in chicken broth, bring to a simmer, and cook for 2 minutes, scraping up any browned bits from the bottom of the pan.
  6. Reduce heat to low, stir in heavy cream, and simmer for 3 minutes until the sauce thickens slightly.
  7. Stir in grated Parmesan cheese until melted and smooth, about 1 minute.
  8. Drain the pasta, add it to the skillet, and toss to coat evenly with the sauce; adjust consistency with a splash of pasta water if needed.

Notes

Garnish with extra Parmesan and fresh basil before serving.
