Ingredients

Main
  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish optional

Equipment

  • Large skillet
  • Shallow dishes for breading
  • Baking dish
  • Meat mallet or rolling pin
  • Sharp knife

Method

  1. Preheat the oven to 400°F (200°C).
  2. Using a meat mallet, pound the chicken breasts to about ½ inch thickness.
  3. In three shallow dishes, place flour, beaten eggs, and breadcrumbs.
  4. Season the flour with salt and pepper. Dredge each chicken breast in flour, dip in eggs, and coat with breadcrumbs.
  5. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for about 3-4 minutes on each side until golden brown.
  6. In a baking dish, spread a thin layer of marinara sauce. Place the seared chicken on top and cover each piece with more sauce and both cheeses.
  7. Bake in the preheated oven for about 20 minutes.
  8. Let it rest for a few minutes, then garnish with fresh basil before serving.

Notes

For extra flavor, add Italian seasoning to your breadcrumbs.
