Ingredients

Main
  • 1 pound boneless chicken thighs cut into 1-inch cubes
  • 1/4 cup plain yogurt
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped (for garnish)

Equipment

  • Grill or grill pan
  • Mixing bowl
  • Skewers (soaked in water if wooden)
  • Meat thermometer
  • Knife and cutting board

Method

  1. In a mixing bowl, combine the yogurt, olive oil, lemon juice, cumin, paprika, coriander, salt, pepper, and minced garlic.
  2. Add the cubed chicken to the bowl and mix well to coat each piece. Let the chicken marinate for at least 30 minutes, or up to overnight in the refrigerator.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated chicken onto skewers, leaving a little space between each piece.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F.
  6. Once cooked, remove the kababs from the grill and let them rest for 5 minutes.
  7. Sprinkle the grilled kababs with chopped parsley before serving.
  8. Serve the kababs with sides like rice, pita, or a fresh salad.

Notes

Kababs can be customized with veggies and served with various dips.
