Ingredients

Main
  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Equipment

  • Instant Pot or electric pressure cooker
  • Measuring cups and spoons
  • Cutting board
  • Sharp knife
  • Serving spoon

Method

  1. Turn on the Instant Pot and set it to the sauté function.
  2. Add olive oil, letting it heat before adding the chopped onion and garlic.
  3. Add the chicken breasts to the pot, browning them for about 2-3 minutes on each side.
  4. Sprinkle paprika, thyme, salt, and pepper over the chicken, coating each piece well.
  5. Pour in the chicken broth, scraping any browned bits from the bottom of the pot.
  6. Close the lid of the Instant Pot and set it to cook on high pressure for 10 minutes.
  7. After the cooking time, let the pressure release naturally for 5 minutes.
  8. Switch the valve to quick release to let out any remaining steam.
  9. Carefully remove the chicken from the pot and shred it with two forks.
  10. Return the shredded chicken to the pot, stirring it into the broth.
  11. Plate the chicken with a ladle of broth over the top and serve.

Notes

For extra flavor, marinate the chicken in your favorite spices for a few hours before cooking.
