Ingredients

Main
  • 1 lb boneless skinless chicken breasts, diced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup broccoli florets optional
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Equipment

  • Large skillet or saucepan
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Knife and cutting board

Method

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced chicken and season with salt, pepper, garlic powder, and onion powder.
  3. Cook the chicken thoroughly until browned.
  4. Stir in the rice until it's well mixed with the chicken.
  5. Pour in the chicken broth and bring to a boil.
  6. If using broccoli, add it to the skillet.
  7. Reduce heat to low, cover the skillet, and let it simmer for about 20 minutes.
  8. Once the rice is tender and the liquid is absorbed, stir in the shredded cheese.
  9. Remove from heat, fluff with a fork, and serve warm.

Notes

For extra creaminess, stir in a splash of heavy cream just before adding the cheese.
