Method
- Preheat the oven to 425°F and prepare to bake the pizza.
- In a large skillet over medium-high heat, cook the chopped bacon until crispy, about 7 to 8 minutes, stirring occasionally; remove with a slotted spoon and set aside on paper towels, leaving 1 tablespoon of bacon grease in the skillet.
- Add the chicken pieces to the same skillet with the bacon grease, season with salt, black pepper, and garlic powder, and cook over medium-high heat for 6 to 7 minutes until golden and cooked through (internal temperature 165°F); remove from heat.
- Lightly oil a 14-inch pizza pan or baking sheet with olive oil to prevent sticking and crisp the crust.
- If the dough is cold, let it rest for 5 minutes, then stretch it to fit the prepared pan, working from the center outward.
- Spread the ranch dressing evenly over the dough, leaving a 1/2-inch border around the edges.
- Sprinkle the mozzarella cheese evenly over the ranch layer, then add the shredded cheddar cheese.
- Distribute the cooked chicken pieces and crispy bacon evenly across the cheese, then scatter the diced red onion and chopped fresh chives on top.
- Bake in the preheated 425°F oven for 12 to 14 minutes, until the crust is golden brown and the cheese is melted and bubbling at the edges.
- Remove the pizza from the oven and let it rest for 2 to 3 minutes before slicing into 4 to 8 pieces.
Notes
Don't skip cooking the chicken separately, as it needs to reach 165°F internally and won't cook through in the pizza bake time.
