Ingredients

Main
  • 2 cups purple corn kernels
  • 10 cups water
  • 1 cinnamon stick
  • 5 cloves
  • 1 apple diced
  • 1 pineapple diced
  • 1 cup sugar adjust to taste
  • 1/2 cup fresh lime juice

Equipment

  • Large pot
  • Strainer
  • Pitcher
  • Stirring spoon
  • Measuring cups

Method

  1. In a large pot, combine the purple corn and water. Boil this mixture for about 30 minutes to extract the color and flavor from the corn.
  2. After the corn has boiled, add the cinnamon stick and cloves. This will infuse lovely warm spice notes into the drink.
  3. Next, add the diced apple and pineapple to the pot. Fruits not only add sweetness but also a refreshing flavor that complements the spices.
  4. Let the mixture simmer for an additional 10 minutes. This step allows the fruit to soften and release their juices, enhancing the overall taste.
  5. After simmering, remove the pot from heat and strain the liquid into a pitcher. Discard the corn and fruit solids as they have done their job.
  6. While the mixture is still warm, add the sugar and stir until it's fully dissolved.
  7. Once the mixture has cooled slightly, stir in the fresh lime juice.
  8. Refrigerate the Chicha Morada until it is cold. Serve it over ice for a refreshing drink.

Notes

For a more intense flavor, let the drink chill overnight before serving. Adjust sweetness according to personal taste.
