Ingredients

Main
  • 1/2 cup chia seeds
  • 2 cups milk almond, coconut, or dairy
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

Equipment

  • Mixing bowl
  • Whisk or spoon
  • Measuring cups and spoons
  • Jars or bowls for storage
  • Refrigerator

Method

  1. In a mixing bowl, whisk together 1/2 cup chia seeds, 2 cups milk (almond, coconut, or dairy), 1/4 cup maple syrup or honey, 1 teaspoon vanilla extract, and a pinch of salt.
  2. Stir thoroughly to evenly distribute the chia seeds in the liquid to avoid clumps and ensure a smooth texture.
  3. Allow the mixture to sit for 5 minutes to let the chia seeds absorb the liquid and expand.
  4. After 5 minutes, stir the mixture again to break up any clumps.
  5. Transfer the mixture into jars or bowls, cover, and refrigerate for at least 4 hours or overnight until thickened.
  6. If the pudding is too thick after chilling, stir in a splash of milk to reach desired consistency.
  7. Scoop the pudding into bowls and top with fruits, nuts, or granola as desired.
  8. Serve immediately and enjoy the creamy chia seed pudding.

Notes

Pro Tip: Letting the pudding sit overnight allows the flavors to deepen and improves the texture.
