Ingredients

Main
  • 4 cups fresh cherries pitted and halved
  • 2 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon salt

Equipment

  • Large saucepan
  • Wooden spoon
  • Potato masher (optional)
  • Sterilized jars with lids
  • Canning funnel (optional)
  • Jar lifter (optional)

Method

  1. Start by washing the cherries thoroughly under cold water.
  2. Remove the pits and halve the cherries.
  3. In a large saucepan, combine the prepared cherries, sugar, lemon juice, and salt. Stir to coat the cherries and allow them to sit for about 10 minutes.
  4. Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally.
  5. Reduce the heat to low and let the mixture simmer for 20-30 minutes.
  6. To check for doneness, place a small amount on a plate and run your finger through it. If it holds its shape, it’s done.
  7. Remove the saucepan from heat and let it cool for a few minutes. Carefully ladle the hot preserves into sterilized jars.
  8. Wipe the rims of the jars with a clean cloth and seal with lids. Let the jars cool to room temperature before storing.
