Method
 

  1. Gather all spices in one place to ensure no ingredient is missed.
  2. Measure 2 tablespoons ground cumin and 2 tablespoons chili powder into a small mixing bowl.
  3. Add 1 tablespoon garlic powder and 1 tablespoon onion powder, whisking gently to break up any clumps.
  4. Mix in 1 tablespoon dried oregano and lime zest (use 1 teaspoon dried or 2 teaspoons fresh), crushing oregano pieces as you add.
  5. Whisk in 1 teaspoon paprika, 1/2 teaspoon ground coriander, and 1/4 to 1/2 teaspoon cayenne pepper, adjusting heat level.
  6. Stir in 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper to finish the blend.
  7. Taste a pinch of the dry seasoning and adjust cayenne pepper if more heat is desired.
  8. Whisk thoroughly for 1 minute to ensure even distribution and break up clumps, then transfer to an airtight jar for storage.
