Ingredients

Main
  • 4 chicken thighs bone-in, skin-on for extra flavor
  • 2 tablespoons olive oil to help the spices stick
  • 1 teaspoon garlic powder for a savory kick
  • 1 teaspoon paprika adds a smoky flavor
  • 1 teaspoon salt enhances overall taste
  • 1/2 teaspoon black pepper for a bit of heat
  • 1 teaspoon dried herbs like thyme or rosemary, for freshness

Equipment

  • Campfire or grill
  • Heavy-duty aluminum foil
  • Measuring spoons
  • Sharp knife
  • Cutting board
  • Long-handled tongs

Method

  1. Start by rinsing the chicken thighs under cold water. Pat them dry with paper towels to ensure the skin gets crispy.
  2. In a bowl, combine the olive oil, garlic powder, paprika, salt, black pepper, and dried herbs.
  3. Rub the marinade all over the chicken thighs, getting under the skin for maximum flavor.
  4. Take a large piece of heavy-duty aluminum foil and place the chicken in the center. Fold the foil around the chicken to create a sealed packet.
  5. Build your campfire or heat your grill until the flames die down and the coals are hot.
  6. Place the foil packet on the grill or near the hottest part of the campfire. Cook for about 30 minutes, turning halfway.
  7. Carefully open the foil to check if the chicken has reached an internal temperature of 165°F.
  8. Remove the chicken from the foil carefully and serve hot.

Notes

For extra flavor, marinate the chicken overnight in the fridge before cooking.
