Ingredients

Main
  • 4 boneless skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 1 bell pepper diced (red or green)
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Equipment

  • Large skillet or frying pan
  • Cutting board
  • Sharp knife
  • Wooden spoon or spatula
  • Measuring cups and spoons

Method

  1. Start by seasoning the chicken breasts with the Cajun seasoning.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the seasoned chicken breasts to the skillet and brown on both sides, about 5 minutes per side.
  4. Once browned, remove the chicken from the skillet and set aside.
  5. In the same skillet, add the diced onion and bell pepper. Sauté until they are soft, about 3-4 minutes.
  6. Stir in the minced garlic and cook for an additional minute until fragrant.
  7. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer.
  8. Add the chicken back into the skillet, cover, and let it cook for 15-20 minutes.
  9. Serve with fresh parsley for garnish.
