Ingredients

Main
  • 1 pre-made pie crust
  • 1 cup brown sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 3 egg yolks
  • Whipped cream for topping

Equipment

  • 9 inch pie dish
  • Mixing bowls
  • Whisk
  • Stove
  • Measuring cups and spoons
  • Rubber spatula

Method

  1. Preheat your oven to 350°F (175°C). Place the pre-made pie crust in a 9-inch pie dish and poke holes in the bottom with a fork.
  2. Bake the crust for about 10 minutes until lightly golden.
  3. In a medium bowl, whisk together the brown sugar, cornstarch, and salt.
  4. In a saucepan, heat the milk over medium heat until it's steaming but not boiling.
  5. Gradually whisk the hot milk into the dry mixture until smooth.
  6. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened for about 5-7 minutes.
  7. Remove from heat and whisk in the egg yolks, vanilla extract, and butter until smooth.
  8. Pour the butterscotch filling into the baked pie crust, spread evenly, and let it cool at room temperature before chilling in the fridge for at least 4 hours.

Notes

Allow the pie to chill overnight for the best flavor and texture.
