Ingredients

Main
  • 4 chicken thighs skinless and bone-in
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper chopped (red or green)
  • 2 carrots sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon browning sauce
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 cups chicken broth
  • 1 tablespoon vegetable oil
  • 2 green onions chopped

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Wooden spoon or spatula

Method

  1. Rinse the chicken thighs under cold water and pat them dry.
  2. In a bowl, combine the chicken with soy sauce, browning sauce, thyme, allspice, black pepper, and salt. Marinate for at least 30 minutes.
  3. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  4. Add the marinated chicken thighs to the pot and brown them on both sides for about 5 minutes each.
  5. Remove the chicken and set it aside. In the same pot, sauté chopped onions, garlic, bell pepper, and carrots for 3-4 minutes.
  6. Place the browned chicken back into the pot with the sautéed vegetables.
  7. Pour in the chicken broth and bring the mixture to a boil.
  8. Reduce the heat to low, cover, and let it simmer for 45 minutes.

Notes

For the best flavor, let the chicken marinate overnight in the fridge.
