Ingredients

Main
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet 2 1/4 teaspoons active dry yeast
  • 1 teaspoon salt
  • 1/2 cup whole milk warmed
  • 5 large eggs at room temperature
  • 1 cup unsalted butter softened
  • 1 egg for egg wash

Equipment

  • Large mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Stand mixer with dough hook (optional)
  • Plastic wrap or clean kitchen towel
  • Baking sheet
  • Parchment paper
  • Cooling rack

Method

  1. In a small bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour and salt.
  3. In a separate bowl, beat the eggs until well combined.
  4. Pour the yeast mixture and beaten eggs into the dry ingredients. Stir until a shaggy dough forms.
  5. Gradually add the softened butter, mixing until fully incorporated.
  6. Knead the dough on a floured surface or in a stand mixer for about 10 minutes.
  7. Place the dough in a greased bowl and cover with plastic wrap. Let it rise in a warm place until doubled, about 1-2 hours.
  8. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place on a lined baking sheet.
  9. Cover and let rise for another 30-45 minutes.
  10. Preheat the oven to 375°F (190°C). Brush rolls with egg wash.
  11. Bake for 15-20 minutes or until golden brown.
  12. Remove from oven and cool on a rack.

Notes

These brioche rolls are fantastic on their own but shine with the right accompaniments.
