  • 1 cup diced bell peppers any color
  • 1 cup diced onion
  • 8 ounces cooked sausage breakfast sausage or chorizo
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Equipment

  • Large skillet or frying pan
  • Spatula
  • Knife
  • Cutting board
  • Measuring cups and spoons

Method

  1. Start by washing and dicing your potatoes, bell peppers, and onion.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced potatoes, season with salt and pepper, and cook for about 10-15 minutes, stirring occasionally, until they are golden brown and tender.
  4. Stir in the diced onions and bell peppers once the potatoes are cooked.
  5. Add the cooked sausage to the skillet and stir it in.
  6. Sprinkle in the garlic powder and paprika, mixing well.
  7. Continue cooking, stirring occasionally for another 5-10 minutes.
  8. Taste your hash and adjust the seasoning with more salt and pepper if needed.
  9. Once everything is cooked, remove from heat and serve hot, garnished with fresh parsley if desired.

Notes

For extra crispiness, avoid stirring too frequently and let the potatoes sit in the skillet for a few minutes.
