Ingredients

Main
  • 8 large eggs
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1 cup cooked and crumbled bacon or sausage
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 8 large flour tortillas
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Equipment

  • Large skillet
  • Mixing bowl
  • Whisk
  • Tortilla warmer or foil
  • Measuring cups and spoons
  • Cutting board and knife

Method

  1. In a large skillet, cook the bacon or sausage over medium heat until crispy, about 5-7 minutes.
  2. Remove the meat and drain excess grease if necessary. In the same skillet, add olive oil and sauté the diced bell peppers and spinach until softened, about 3-4 minutes.
  3. In a mixing bowl, whisk together the eggs, salt, and pepper until combined.
  4. Pour the egg mixture into the skillet and cook over medium heat, stirring gently until the eggs are almost set, about 5-7 minutes.
  5. Add the cooked bacon or sausage back to the skillet and mix everything together.
  6. Lay a tortilla flat and spoon a generous amount of the egg mixture onto the center. Top with shredded cheese.
  7. Fold in the sides of the tortilla and roll it tightly from the bottom up.
  8. Wrap each burrito in foil or place in a tortilla warmer. Store in the refrigerator for up to 5 days or freeze for longer storage.

Notes

Make sure to cool the filling before wrapping to avoid soggy tortillas!
