  • 2 cups bourbon 480 ml
  • 1 cup fresh lemon juice 240 ml
  • 1 cup fresh orange juice 240 ml
  • 1/2 cup simple syrup 120 ml
  • 3 cups water 720 ml
  • 1 large egg white optional
  • Pinch of salt
  • Fresh lemon wheels or twists for garnish

Method
 

  1. Combine 1/2 cup sugar and 1/2 cup water in a small saucepan over medium heat and cook, stirring, until sugar dissolves, about 3 minutes. Let cool to room temperature, about 15 minutes.
  2. Cut lemons and oranges in half and juice until you have 1 cup fresh lemon juice and 1 cup fresh orange juice.
  3. Pour bourbon, lemon juice, orange juice, cooled simple syrup, and water into a blender. Add a pinch of salt.
  4. Crack one large egg white into the blender if using for a silky texture.
  5. Blend on high speed for 1 minute until the mixture is uniform.
  6. Transfer the mixture to a freezer-safe container with a lid and place in the freezer.
  7. After 2 hours, stir vigorously with a fork or whisk to break up ice crystals. Repeat every 2 hours for a total of 8 hours.
  8. After the final stir, leave the mixture undisturbed in the freezer for at least 2 more hours until slushy.
  9. Use an ice cream scoop to fill glasses with slush and garnish with a lemon wheel or twist. Serve immediately.

Notes

Don't skip stirring every two hours during the first 8 hours; this ensures a smooth slush instead of a solid block.
