- Combine 1/2 cup sugar and 1/2 cup water in a small saucepan over medium heat and cook, stirring, until sugar dissolves, about 3 minutes. Let cool to room temperature, about 15 minutes.
- Cut lemons and oranges in half and juice until you have 1 cup fresh lemon juice and 1 cup fresh orange juice.
- Pour bourbon, lemon juice, orange juice, cooled simple syrup, and water into a blender. Add a pinch of salt.
- Crack one large egg white into the blender if using for a silky texture.
- Blend on high speed for 1 minute until the mixture is uniform.
- Transfer the mixture to a freezer-safe container with a lid and place in the freezer.
- After 2 hours, stir vigorously with a fork or whisk to break up ice crystals. Repeat every 2 hours for a total of 8 hours.
- After the final stir, leave the mixture undisturbed in the freezer for at least 2 more hours until slushy.
- Use an ice cream scoop to fill glasses with slush and garnish with a lemon wheel or twist. Serve immediately.
Notes
Don't skip stirring every two hours during the first 8 hours; this ensures a smooth slush instead of a solid block.
