Ingredients

Main
  • 2 bone-in ribeye steaks about 1.5 inches thick
  • 2 tablespoons olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 cloves garlic crushed
  • Fresh rosemary or thyme optional

Equipment

  • Heavy skillet or cast iron skillet
  • Tongs
  • Meat thermometer
  • Cutting board
  • Sharp knife

Method

  1. Start by bringing the steaks to room temperature for about 30 minutes.
  2. Pat the steaks dry with paper towels and rub them with olive oil.
  3. Generously season both sides with salt and black pepper.
  4. Heat your skillet over medium-high heat until it’s very hot.
  5. Add the steaks to the skillet and sear for about 4-5 minutes without moving them.
  6. Using tongs, flip the steaks and add the crushed garlic and herbs to the pan.
  7. Continue cooking for another 4-5 minutes, or until the internal temperature reaches 130°F for medium-rare.
  8. Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes.
  9. After resting, slice the steaks against the grain.

Notes

This steak pairs beautifully with sides like garlic mashed potatoes, grilled vegetables, or a classic Caesar salad.
