Ingredients

Main
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 cup finely chopped onion
  • 1 cup finely chopped carrot
  • 1 cup finely chopped celery
  • 1 pound ground beef or a mix of beef and pork
  • 1 cup whole milk
  • 1 can 28 ounces crushed tomatoes
  • Salt to taste
  • Freshly ground black pepper to taste

Equipment

  • Large heavy-bottomed pot or Dutch oven
  • Wooden spoon
  • Chopping board
  • Sharp knife
  • Measuring cups and spoons

Method

  1. In a large pot, heat the olive oil and butter over medium heat until the butter melts.
  2. Add the chopped onion, carrot, and celery to the pot. Sauté them for about 5 minutes until they soften and become fragrant.
  3. Increase the heat to medium-high and add the ground beef. Brown the meat while breaking it up with a wooden spoon, ensuring it cooks evenly.
  4. Pour in the milk and simmer gently, this step adds richness and helps to tenderize the meat.
  5. Once the milk has mostly evaporated, stir in the crushed tomatoes.
  6. Add salt and pepper to taste.
  7. Reduce the heat to low and let the sauce simmer uncovered for about 2 hours, stirring occasionally.
  8. Serve the sauce over your favorite pasta, topped with freshly grated Parmesan.

Notes

Allow the sauce to simmer longer for deeper flavor. This Bolognese can be frozen for future meals.
