Main
  • 8 ounces of whole wheat noodles or rice noodles
  • 1 can 15 ounces of black beans, rinsed and drained
  • 1 tablespoon of olive oil
  • 1 cup of bell peppers sliced
  • 1 cup of carrots julienned
  • 2 cloves of garlic minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 teaspoon of ginger grated
  • Salt and pepper to taste
  • Green onions for garnish
  • Sesame seeds for garnish optional

Equipment

  • Large pot
  • Colander
  • Stirring spoon
  • Large skillet or wok
  • Measuring cups and spoons
  • Knife and cutting board

Method

  1. Boil a large pot of water and cook the noodles according to the package instructions. Salting the water enhances the noodles' flavor.

  3. While the noodles cook, slice the bell peppers and julienne the carrots.
  4. Heat olive oil in a large skillet over medium heat. Add the bell peppers and carrots, sautéing for about 3-4 minutes.
  5. Stir in the minced garlic and grated ginger, cooking for an additional minute.
  6. Add the rinsed black beans to the skillet, mixing well with the vegetables.
  7. Add the cooked noodles to the skillet, along with soy sauce and sesame oil. Toss everything together gently.
  8. Season with salt and pepper to taste, then garnish with green onions and sesame seeds if desired.
