Ingredients

Main
  • 4 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1 packet 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water 110°F
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon poppy seeds optional

Equipment

  • Large mixing bowl
  • Whisk
  • Rolling pin
  • Baking sheet
  • Parchment paper
  • Skillet
  • Plastic wrap

Method

  1. In a large mixing bowl, combine the flour, sugar, and salt.
  2. In a separate bowl, mix the warm water and yeast. Let it sit for about 5 minutes until it becomes frothy.
  3. Add the yeast mixture and olive oil to the flour mixture. Stir until a rough dough forms.
  4. Turn the dough onto a floured surface and knead for about 8-10 minutes.
  5. Place the dough in a greased bowl and cover with plastic wrap. Let it rise in a warm place until doubled in size, about 1 hour.
  6. While the dough rises, heat a skillet over medium heat. Sauté the onions until golden and fragrant, then season with black pepper.
  7. Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a ball and then flatten them into disks.
  8. Create a small well in the center of each disk and fill with the sautéed onions. Sprinkle poppy seeds on top if using.
  9. Bake in a preheated oven at 425°F for 15-20 minutes until golden.
