Ingredients

Main
  • 2 cooked lobsters shelled and chopped
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 carrot diced
  • 2 celery stalks diced
  • 1 teaspoon tomato paste
  • 1 cup dry white wine
  • 4 cups fish or seafood stock
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Fresh parsley for garnish

Equipment

  • Large pot or Dutch oven
  • Sharp knife and cutting board
  • Measuring cups and spoons
  • Blender or immersion blender
  • Stirring spoon

Method

  1. Remove the meat from the cooked lobsters and chop it into bite-sized pieces.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the onion, garlic, carrot, and celery, cooking until they are soft and aromatic, about 5-7 minutes.
  4. Stir in the tomato paste and cook for an additional minute.
  5. Pour in the white wine, scraping up any browned bits from the bottom of the pot.
  6. Add the seafood stock and bring the mixture to a boil.
  7. Once boiling, reduce the heat and let it simmer for about 20 minutes.
  8. Using an immersion blender, puree the soup until smooth.
  9. Return the pot to low heat and stir in the heavy cream, paprika, and cayenne pepper.
  10. Season with salt and pepper to taste.
  11. Fold in the chopped lobster meat and let it warm through for a couple of minutes.
  12. Serve hot, garnished with fresh parsley.

Notes

For an extra layer of flavor, add a splash of sherry just before serving.
