Ingredients

Main
  • 1 pound beef or chicken liver
  • 1 medium onion thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt to taste
  • Black pepper to taste
  • Optional: Fresh parsley for garnish

Equipment

  • Large skillet or frying pan
  • Cutting board
  • Sharp knife
  • Measuring spoons
  • Spatula or tongs

Method

  1. Start by rinsing the liver under cold water and patting it dry with paper towels.
  2. Carefully remove any visible veins or connective tissue from the liver.
  3. Cut the liver into thin slices, about 1/2 inch thick.
  4. In a large skillet, heat the olive oil over medium-high heat.
  5. Add the sliced onions to the skillet and cook until they become translucent, about 5 minutes.
  6. Push the onions to the side and add the liver slices to the skillet.
  7. Cook the liver for about 2-3 minutes on each side, or until browned but still slightly pink in the center.
  8. Once the liver is cooked, add the butter to the skillet and let it melt.

Notes

Serve the liver garnished with fresh parsley, paired with mashed potatoes, steamed vegetables, or crusty bread.
