  • 2 cloves garlic minced
  • 3 medium carrots sliced
  • 2 stalks celery sliced
  • 4 cups vegetable broth
  • 1 can 14.5 ounces diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 pound potato gnocchi
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Sharp knife
  • Wooden spoon

Method

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the diced onion for about 3-4 minutes until it becomes translucent.

  4. Pour in the vegetable broth and diced tomatoes, stirring to combine.
  5. Add the dried basil and oregano, along with salt and pepper to taste.
  6. Increase the heat and bring the soup to a gentle simmer; allow to simmer for about 10 minutes.

  8. Stir in the fresh spinach and let it wilt for about a minute.
  9. Taste the soup and adjust seasoning as necessary.

Notes

To prevent gnocchi from becoming mushy, add them just before serving.
