Ingredients

Main
  • 2 tablespoons olive oil
  • 1 pound ground beef or turkey
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup bell peppers diced (any color)
  • 1 cup corn fresh or frozen
  • 1-2 cups beef or vegetable broth as needed

Equipment

  • Slow cooker
  • Large skillet
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons

Method

  1. In a large skillet, heat the olive oil over medium heat. Sauté the diced onion and minced garlic until softened, about 3-4 minutes.
  2. Add the ground beef or turkey to the skillet, breaking it apart as it cooks until browned.
  3. Transfer the meat mixture to your slow cooker. Stir in the kidney beans, black beans, crushed tomatoes, and all the spices.
  4. Mix in the diced bell peppers and corn.
  5. If the mixture seems too thick, pour in 1 cup of broth.
  6. Cover and set your slow cooker to low for 6 to 8 hours.
  7. About 30 minutes before serving, taste and adjust seasonings as needed.
  8. Serve hot with your favorite toppings.

Notes

For even more flavor, let the chili sit in the fridge overnight before serving.
