Ingredients

Main
  • 1 pound ground beef or turkey
  • 1 can 15 ounces kidney beans, drained and rinsed
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 28 ounces diced tomatoes
  • 1 cup onion diced
  • 1 cup bell pepper diced
  • 3 cloves garlic minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper optional
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup beef or vegetable broth

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Sharp knife
  • Wooden spoon or spatula
  • Measuring cups and spoons

Method

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion and bell pepper until they are soft, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute.
  3. Add the ground beef or turkey to the pot, breaking it up with your spatula. Brown the meat thoroughly.
  4. Mix in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper.
  5. Pour in the drained beans and diced tomatoes, stirring to combine.
  6. Add the broth to the pot, stirring everything together.
  7. Bring the mixture to a simmer, then reduce the heat to low. Let it cook for about 30 minutes.
  8. After simmering, taste the chile and adjust the seasoning if needed.

Notes

For even more flavor, let the chile sit for a few hours or overnight; it tastes even better the next day!
