Ingredients

Main
  • 4 beef tenderloin filets about 6 ounces each
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • Fresh rosemary optional, for garnish

Equipment

  • Cast iron skillet or heavy-bottomed pan
  • Tongs
  • Sharp knife
  • Cutting board
  • Meat thermometer

Method

  1. Remove the filets from the refrigerator and let them rest at room temperature for about 30 minutes.
  2. Sprinkle salt and black pepper on both sides of the filets.
  3. Heat the cast iron skillet over medium-high heat until hot.
  4. Add the olive oil to the skillet and swirl to coat.
  5. Place the filets in the skillet and sear for 3-4 minutes without moving them.
  6. Turn the filets over and add butter and minced garlic to the pan.
  7. Using a spoon, baste the filets with the melted butter for about 2-3 minutes.
  8. Use a meat thermometer to check for doneness, aiming for 130°F for medium-rare.
  9. Remove the filets when they reach your desired temperature.
  10. Let the filets rest for 5-10 minutes before slicing.

Notes

This beef tenderloin filet pairs beautifully with garlic mashed potatoes, grilled asparagus, or a lovely red wine sauce.
