Ingredients

Main
  • 2 pounds ground beef 80/20 for optimal juiciness
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper optional for heat
  • 1/2 cup ice water

Equipment

  • Meat grinder or food processor
  • Mixing bowl
  • Sausage stuffer (optional)
  • Sharp knife
  • Measuring spoons
  • Cooking twine (if tying sausages)

Method

  1. Start by cleaning all your equipment thoroughly.
  2. If using a meat grinder, cut the beef into smaller chunks and grind until desired consistency.
  3. In a mixing bowl, combine ground beef with salt, pepper, garlic powder, onion powder, paprika, thyme, and cayenne.
  4. Mix well using hands until spices are evenly distributed.
  5. Slowly mix in ice water to keep the mixture moist.
  6. Cook a small patty to taste and adjust seasoning if necessary.
  7. If using a sausage stuffer, stuff the mixture into casings carefully.
  8. If using casings, tie them off with cooking twine at even intervals.
  9. Cook sausages on a grill or in a skillet over medium heat for about 15 minutes, ensuring they reach an internal temperature of 160°F.
