Ingredients

Main
  • 3 ripe bananas sliced
  • 1 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 2 large eggs beaten
  • 1 teaspoon vanilla extract
  • 1 box vanilla wafer cookies
  • 1 cup heavy cream whipped

Equipment

  • Medium saucepan
  • Whisk
  • Mixing bowls
  • Spatula
  • 9x13 inch baking dish

Method

  1. In a medium saucepan, whisk together the sugar, flour, and salt.
  2. Gradually whisk in the milk and beaten eggs until fully incorporated.
  3. Heat the saucepan over medium heat, stirring constantly until the mixture thickens and bubbles, about 5 minutes.
  4. Once thickened, remove the saucepan from heat and stir in the vanilla extract.
  5. In a 9x13 inch baking dish, layer half of the vanilla wafers, followed by half of the banana slices.
  6. Spread half of the pudding mixture over the layered wafers and bananas.
  7. Repeat the layering process with the remaining wafers, bananas, and pudding.
  8. Finally, spread the whipped cream over the top layer of pudding.

Notes

Use ripe bananas for the best flavor and texture. Chill the assembled pudding for at least an hour before serving.
