Ingredients

Main
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas sliced
  • 1 box vanilla wafers
  • 1 cup heavy cream whipped

Equipment

  • Medium saucepan
  • Whisk
  • Mixing bowl
  • 9x9 inch baking dish or trifle dish
  • Measuring cups and spoons

Method

  1. In a medium saucepan over medium heat, whisk together 1/2 cup granulated sugar, 1/3 cup cornstarch, and 1/4 teaspoon salt.
  2. Gradually whisk in 2 cups whole milk until the mixture is smooth and free of lumps.
  3. Cook over medium heat, stirring constantly, for 8 to 10 minutes until the mixture thickens and begins to bubble.
  4. In a mixing bowl, beat 2 large eggs. Slowly add 1 cup of the hot pudding mixture to the eggs while whisking continuously to temper the eggs.
  5. Pour the tempered egg mixture back into the saucepan and cook for an additional 2 minutes, stirring constantly.
  6. Remove the saucepan from heat and stir in 1 teaspoon vanilla extract.
  7. In a 9x9 inch baking dish or trifle dish, layer vanilla wafers, sliced bananas, and pudding. Repeat layers, finishing with a layer of pudding on top.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight before serving.

Notes

For best results, let the pudding cool slightly before layering to keep the wafers crisp and chill overnight for deeper flavor.
