Ingredients

Main
  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • Vegetable oil for frying

Equipment

  • Mixing bowl
  • Whisk or fork
  • Skillet or frying pan
  • slotted spoon
  • Paper towels

Method

  1. Peel the ripe bananas and place them in a mixing bowl. Mash them with a fork until mostly smooth, leaving some small chunks for texture.
  2. In a separate bowl, combine the flour, baking powder, salt, and sugar.
  3. Add the vanilla extract and milk to the mashed bananas. Mix until well combined.
  4. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined.
  5. In a skillet, heat about 1/2 inch of vegetable oil over medium heat.
  6. Drop spoonfuls of batter into the hot oil, frying until golden brown, about 2-3 minutes per side.
  7. Use a slotted spoon to remove the fritters and place them on a plate lined with paper towels.
  8. Serve the fritters warm, optionally dusted with powdered sugar or drizzled with honey.

Notes

For extra flavor, add a pinch of cinnamon to the batter before frying.
