Ingredients

For the Sauce
  • 20 pounds fresh tomatoes cored and chopped
  • 2 large onion finely chopped
  • 6 cloves garlic minced
  • 1/4 cup olive oil
  • 1 cup fresh basil chopped
  • 1 tablespoon oregano dried
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1/2 cup vinegar for acidity

Equipment

  • Canning jars (pints or quarts)
  • Large pot for boiling
  • Large saucepan for cooking sauce
  • Jar lifter
  • Canning funnel
  • Food processor or blender

Method

  1. Start by sterilizing your canning jars to prevent any unwanted bacteria.
  2. In a large pot, combine the chopped tomatoes and bring to a boil to break them down.
  3. In a separate saucepan, heat olive oil over medium heat and cook the onions and garlic until soft and fragrant.
  4. Stir in the fresh basil, oregano, sugar, salt, and pepper into the onion mixture.
  5. Once the tomatoes are softened, blend them until smooth and mix with the sautéed aromatics.
  6. Let the sauce simmer for about 30 minutes, stirring occasionally.
  7. Stir in the vinegar just before finishing cooking to balance the sauce's sweetness.
  8. Using a canning funnel, fill the jars with the hot sauce, leaving about 1/2 inch of headspace.

Notes

Serve with pasta, as a pizza sauce, or for dipping breadsticks. Adjust seasoning to taste.
