  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 green onions chopped

  • Sharp knife
  • Large spoon
  • Mixing bowl

Method

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes, then poke several holes in each with a fork.
  3. Bake the potatoes directly on the oven rack for about 45 minutes or until tender.
  4. Once baked, let the potatoes cool for about 10 minutes.
  5. Cut each potato in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch around the skin.
  6. Brush the insides of the potato skins with olive oil, then sprinkle with salt and pepper.
  7. Lay the skins cut side down on a baking sheet and bake for 10 minutes, then flip and bake for another 10 minutes until crispy.
  8. Remove the skins from the oven, sprinkle with cheese and bacon, and return to the oven for another 5 minutes.

Notes

For extra crispiness, broil the skins for an additional 2-3 minutes after adding toppings.
