Ingredients

Main
  • 1 cup of cooked white fish flaked (like cod or snapper)
  • 1/2 cup of all-purpose flour
  • 1/4 cup of cornmeal
  • 2 green onions chopped
  • 1 small onion finely chopped
  • 1 garlic clove minced
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of cayenne pepper optional for heat
  • 1/2 cup of water
  • Vegetable oil for frying

Equipment

  • Mixing bowl
  • Frying pan
  • Spatula
  • Paper towels
  • Measuring cups and spoons

Method

  1. Start by shredding your cooked fish into small pieces.
  2. In a mixing bowl, combine the flour, cornmeal, green onions, onion, garlic, thyme, black pepper, salt, and cayenne pepper.
  3. Gently fold in the flaked fish into the dry mixture.
  4. Gradually add water to the mixture until it reaches a thick but pourable consistency.
  5. In a frying pan, heat about half an inch of vegetable oil over medium heat.
  6. Using a spoon, drop dollops of the fish mixture into the hot oil. Fry them until golden brown, about 3-4 minutes on each side.
  7. Once cooked, transfer the fish cakes to a plate lined with paper towels to absorb excess oil.
  8. Serve your Bajan Fish Cakes hot, ideally with a spicy dipping sauce.
