Ingredients

Main
  • 1 cup raw almonds
  • 1 cup sugar
  • 1/2 cup ghee clarified butter
  • 1 cup milk
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon chopped pistachios for garnish
  • 1 tablespoon saffron strands soaked in 2 tablespoons warm milk

Equipment

  • Blender or food processor
  • Heavy-bottomed pan or kadhai
  • Spatula or wooden spoon
  • Measuring cups and spoons
  • Serving dish

Method

  1. Soak the almonds in warm water for at least 4-6 hours or overnight.
  2. Drain the soaked almonds and transfer them to a blender. Add a little milk and blend until you achieve a smooth paste, adding more milk if necessary for consistency.
  3. In a heavy-bottomed pan, heat the ghee over medium heat until melted.
  4. Add the almond paste to the heated ghee. Stir continuously for about 5-7 minutes until the mixture thickens and the ghee starts to separate from the paste.
  5. Stir in the sugar and milk, mixing well to combine.
  6. Sprinkle in the cardamom powder and the soaked saffron along with the milk.
  7. Continue cooking the mixture for another 10-15 minutes, stirring frequently until it thickens further and starts to pull away from the sides.
  8. Once the halwa is ready, transfer it to a serving dish and garnish with chopped pistachios.

Notes

Serve warm or at room temperature. Can be paired with vanilla ice cream or chai.
