Ingredients

Main
  • 1 pound of bacon chopped
  • 1 medium onion finely chopped
  • 1/2 cup of brown sugar
  • 1/2 cup of maple syrup
  • 1/4 cup of apple cider vinegar
  • 1 tablespoon of Dijon mustard
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper optional for heat

Equipment

  • Large skillet or frying pan
  • Wooden spoon
  • Cutting board
  • Sharp knife
  • Jar or container for storage

Method

  1. Cook the chopped bacon in a large skillet over medium heat until crispy.
  2. Remove the bacon from the skillet and set it aside on paper towels to drain.
  3. In the same skillet, add the chopped onions and cook until soft and translucent, about 5-7 minutes.
  4. Add the cooked bacon back to the skillet with the onions.
  5. Stir in the brown sugar, maple syrup, apple cider vinegar, Dijon mustard, black pepper, and cayenne pepper if using.
  6. Bring the mixture to a gentle simmer over low heat.
  7. Let it simmer for about 20-25 minutes, stirring occasionally, until thickened to a jam-like consistency.
  8. For a smoother texture, use an immersion blender to puree the jam slightly.
  9. Transfer the bacon jam to a clean jar or container and allow it to cool completely.
