Method
- In a large mixing bowl, combine 1 cup breadcrumbs, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- In a small bowl, whisk together 1 egg and 1/4 cup milk, then pour into the breadcrumb mixture and stir to form a paste.
- Add 2 pounds ground beef, 1/2 cup minced onion, and 2 cloves minced garlic; mix gently until just combined.
- Shape the mixture into 24 meatballs, about 1.5 inches in diameter.
- Heat a large skillet over medium-high heat with a light coating of oil and brown meatballs 2 to 3 minutes per side.
- In a bowl, whisk together 1 cup grape jelly, 3/4 cup chili sauce, 2 tablespoons Worcestershire sauce, and 1 tablespoon Dijon mustard until smooth.
- Return the browned meatballs to the skillet, pour the glaze over them, reduce heat to medium-low, and simmer for 15 to 20 minutes, stirring occasionally.
- Check that the internal temperature of the meatballs reaches 160°F and adjust seasoning with a pinch of salt or splash of Worcestershire sauce if needed.
Notes
Meatballs can be made ahead and stored in their sauce in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat gently in a slow cooker set to warm.
