Ingredients

Main
  • 1 lb boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 small corn tortillas
  • 1/2 cup fresh cilantro chopped
  • 1 lime cut into wedges
  • 1/2 cup diced onion optional
  • 1/2 cup salsa optional

Equipment

  • Skillet or frying pan
  • Cutting board
  • Sharp knife
  • Measuring spoons
  • Tongs
  • Serving platter

Method

  1. Start by trimming any excess fat from the chicken thighs.
  2. In a bowl, mix the chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Coat the chicken evenly with this spice blend.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Add the seasoned chicken to the skillet and cook for about 5-7 minutes per side until browned and cooked through.
  5. Once cooked, remove the chicken from the skillet and let it rest for a few minutes.
  6. Shred the chicken while warm.
  7. In the same skillet, briefly warm the corn tortillas for about 30 seconds on each side.
  8. Take a warm tortilla and fill it with shredded chicken. Top with chopped cilantro, diced onion, and a squeeze of lime.
  9. Serve your tacos right away with extra lime wedges and salsa on the side.

Notes

Experiment with toppings for a unique twist; consider adding avocado or pickled jalapenos.
